I make a mean beef stew, if I do say so myself. These biscuits are the perfect accompaniment to it. And as a bonus they are quick and easy to make. Serve them warm.
Mix together 2 cups of flour, 3 teaspoons baking powder, 2 tablespoons sugar, 1/2 teaspoon cream of tartar, 1/4 teaspoon of salt, 1/4 teaspoon of baking powder. Cut in 1/2 cup shortening. Mix in 3/4 cup of buttermilk (or milk soured with about a teaspoon of vinegar). Roll out about 1/2 inch thick and cut into circles. Bake at 450 degrees for about 10 minutes, until lightly browned.
As with any baking that is supposed to be flaky do not overwork the dough, just work it enough that it can be rolled out smoothly.
Mamalu.
